  • 2 tbsp unsalted butter

  • 2 cups heavy whipping cream

  • 1/2 cup unsweetened almond milk

  • 1/2 tsp xanthan gum

  • Salt & pepper to taste

  • Optional: 1/4 tsp garlic powder, onion powder, smoked paprika

For the Low-Carb Biscuits:

  • 2 cups almond flour

  • 1 tbsp baking powder

  • 1/2 tsp sea salt

  • 2 large eggs

  • 1/3 cup sour cream (or Greek yogurt)

  • 1/2 cup shredded mozzarella or cheddar cheese


Instructions

  • Brown the Sausage
    In a skillet over medium heat, cook sausage until fully browned. Leave about 1 tbsp grease for flavor.

  • Add Butter & Seasoning
    Stir in butter and spices (garlic, onion, paprika) to coat the sausage.

  • Make the Gravy Base
    Pour in heavy cream and almond milk. Simmer gently.

  • Thicken
    Sprinkle in xanthan gum while stirring. Simmer until thickened (5–7 min).

  • Prepare Biscuits
    Mix almond flour, baking powder, salt. Add eggs, sour cream, and cheese. Form dough.

  • Bake Biscuits
    Scoop onto a baking sheet, bake at 375°F for 12–15 minutes.

  • Serve
    Split biscuits, top with hot keto sausage gravy. Garnish if desired.
