Ingredients:

  • 2 1/4 tsp active dry yeast

  • 1 1/2 cups warm water (110°F)

  • 1/2 cup granulated sugar

  • 1 tsp salt

  • 2 large eggs

  • 1 cup evaporated milk

  • 7 cups all-purpose flour

  • 1/4 cup shortening

  • Vegetable oil for frying

  • Powdered sugar (for dusting)


Instructions

  1. In a large bowl, dissolve yeast in warm water. Let stand for 5 minutes until foamy.

  2. Add sugar, salt, eggs, and evaporated milk. Mix until well blended.

  3. Mix in 3 cups of flour, then add the shortening. Mix in the remaining flour until dough forms.

  4. Cover and chill dough for at least 2 hours or overnight.

  5. Roll out dough to 1/4-inch thickness. Cut into 2.5-inch squares.

  6. Heat oil in a deep fryer or skillet to 375°F (190°C). Fry beignets 2–3 minutes on each side until puffed and golden.

  7. Remove and drain on paper towels.

  8. Generously dust with powdered sugar. Serve warm!
