2 1/4 tsp active dry yeast

1 1/2 cups warm water (110°F)

1/2 cup granulated sugar

1 tsp salt

2 large eggs

1 cup evaporated milk

7 cups all-purpose flour

1/4 cup shortening

Vegetable oil for frying

Powdered sugar (for dusting)
Instructions

In a large bowl, dissolve yeast in warm water. Let stand for 5 minutes until foamy.

Add sugar, salt, eggs, and evaporated milk. Mix until well blended.

Mix in 3 cups of flour, then add the shortening. Mix in the remaining flour until dough forms.

Cover and chill dough for at least 2 hours or overnight.

Roll out dough to 1/4-inch thickness. Cut into 2.5-inch squares.

Heat oil in a deep fryer or skillet to 375°F (190°C). Fry beignets 2–3 minutes on each side until puffed and golden.

Remove and drain on paper towels.

Generously dust with powdered sugar. Serve warm!
